Mac and Cheese
Ingredients
- 300g Macaroni
- 900ml milk
- 75g grated Parmesan
- 75g grated mature Cheddar
- 50g unsalted butter
- 50g plain flour
- 1 tbsp Dijon mustard
- Salt and pepper
- Optional: Bread crumbs
Method
- Cook the Macaroni.
- Warm the milk - not boiling.
- Melt the better in a pan and then add the flour into a paste.
- Very slowly add the milk, whisking all the time.
- When all the milk is mixed in, add the grated cheese, parmesan, and dijon into the mix.
- Season to taste
- When the pasta is ready, mix in the sauce
- But all the mix into an oven proof dish
- Add the breadcrums, more grated cheese, and more parmesan on top
- Grill for 10 minutes
