Spaghetti Con Chorizo
Ingredients
- A ring of Chorizo (Chunky chopped)
- 1 onion chopped
- 2 cloves of garlic finely chopped
- Mushrooms (Optional)
- Courgette (Optional)
- Fennel seeds
- 1 tin of chopped tomatoes
- Basil
- Cracked black pepper
- 300g of Spaghetti
Method
- Put some oil in a pan with a good spread of Fennel seeds.
- Fry off the onions, garlic, and Chorizo so the oils from the Chorizo cover the onion and garlic.
- Once the onions are covered in Chorizo oil and are softened, add in the Mushrooms and Courgettes if you’re adding them.
- When the mushrooms and courgettes are covered in juices, add in the tin of tomatoes.
- Add some basil and let simmer for a while.
- Boil some water and put the Spaghetti on.
- When the chorizo sauce starts to dry out, put one or two tablespoons of pasta water into the sauce.
- When the pasta is ready, mix in with the chorizo and sauce.
- Serve.
